I am Dr. Asmaa Al-Asmar, a Palestinian scientist with expertise in food science, biotechnology, and material science. I hold a PhD in Biotechnology from the University of Naples “Federico II” Italy. I specialize in developing innovative bio-based materials from protein and polysaccharides incorporated with natural nanoparticles, imbued with antimicrobial and antioxidant properties. These materials hold great potential for biotechnological applications. In addition, my research focuses on developing innovative edible films and coatings to improve food safety, extend shelf life, and reduce the formation of harmful compounds during food processing.
