Green Chemistry in Food Safety: Olive Leaf Extract and Chitosan Nanoparticles for HMF and Acrylamide Reduction Nowadays, food safety can be enhanced by mitigating acrylamide (ACR) and 5-hydroxymethylfurfural (HMF) in fried foods using olive leaf extract (OLE) and chitosan nanoparticles (CH-NPs). The formation of ACR and HMF during high-temperature frying raises significant health concerns, necessitating effective mitigation strategies. Using pectin-based coatings, fortified with OLE and CH-NPs, for reducing ACR and HMF in French fries prepared by deep fat and hot air frying. These coatings significantly boosted antioxidant activity by up to 78.9% and maintained favorable physicochemical properties. Despite hot air frying leading to higher initial ACR and HMF levels, the coatings substantially reduced both compounds across both frying methods (deep fat and hot air frying). Additionally, the coatings, particularly PEC combined with OLE and CH-NPs, decreased oil absorption by 55% and increased moisture content in French fries, contributing to a healthier product. On the other hand, explored hydrocolloid-based coatings, including pectin and chitosan nanoparticles, for producing healthier fried kobbah. The results demonstrated that pectin containing chitosan nanoparticles achieved a significant 78.0% reduction in ACR content in fried kobbah. Treated kobbah also exhibited higher water and lower oil content. Overall, the results highlight the effectiveness of pectin-based coatings fortified with OLE and chitosan nanoparticles as a sustainable, green chemistry solution for mitigating harmful heat-induced compounds in fried foods. This approach not only improves food safety but also enhances nutritional aspects by reducing oil uptake and increasing antioxidant capacity, contributing to healthier and more sustainable food production.
