Assessing how sociodemographic variables affect the significance of dairy product characteristics at the time of purchase

Abstract – Despite several barriers and restrictions, Palestine's food industry is expanding quickly. The IsraeliPalestinian conflict and the consequences of occupation make the Palestinian market distinct. The Palestinian economy is regarded as one of the world's most closed economies. Local dairy products have experienced extraordinary commercial success in recent years when compared to other local food items. Different food product characteristics, such as safety, nutritional value, naturalness, functionality, taste, flavor, price, and shelf life, affect consumer purchase behavior. Accordingly, it is important to evaluate the impact of dairy product characteristics on Palestinian purchase behavior. The aim of this study is to evaluate the importance of different dairy product characteristics on purchase behavior, considering different sociodemographic conditions. The data used in the study was gathered using an online survey administered using the Google Forms platform. More than 790 respondents from different parts of Palestine (refugee, rural, and urban areas) were involved in the study. Our study showed that there were no significant (p > 0.05) correlations between educational levels and the importance of product characteristics (nutritional value, synthetic additive-free, naturalness, shelf life, taste, flavor, shelf life, price) during the purchase process. There were no significant differences in the degree of importance of product characteristics during purchase between different age groups of respondents (50 years). On the other hand, our finding showed that the increasing income of respondents reduced significantly (<0.05) the degree of importance of product size and volume. In conclusion, our study revealed that Palestinian consumers from different sociodemographic conditions perceived product characteristics similarly. Palestinian consumers considered safety as the most important characteristics in the selection of dairy products. Keywords – Dairy Products, Characteristics, Purchase, Consumer, Safety
